I have both a hosted Linux and Windows server provided to me by my employer (hosting company), I work with servers on a day to day basis and am fully aware of what I can do........ but unsure what to do!
If you were given these resources what would you do?

Write a linux kernel module to add some functionality ?

Practice kernel debugging on windows using WinDbg ?

Set up a Windows HPC environment ?

Write some cuda code to perform an interesting parallel computation ?

Security harden the linux or windows severs ?

Many interesting things you can do to computers are general and don't require a server per see. The distinction is pretty arbitrary. Google ran most of its software on commodity whitebox hardware (basically desktops) for a long time, they also use linux which can be scaled up or down to be an embedded, desktop or server OS.

Your question is too general for anyone to really answer, what is important is what YOU want to do with them...
