I have read on the Microsoft website that the 620 and 621 exams can be used towards an MCSE/MCSE exam as credits. Does this mean that the 620/621 exam is counted as a completed module so won't need to do as many modules when going for an mcse/mcsa?

They only count towards the MCSA not the MCSE. So yes, less exam for the MCSA, but more for the MCSE if you include doing the A+ as well.

This is the same for the MCDST which only counts towards the MCSA and not the MCSE.

The 70-620 (& the 70-621 as that implies that you have the credit for the 70-620, see here), can be used as an elective or as the client exam for the MCSA and the MCSE.

You still have to do the required amount of exams for the MCSA/MCSE regardless of which route you take:

MCSA: 3 required exam, 1 elective exam
MCSE: 6 required, 1 elective exam
