I have a site in three languages (English, German, Spanish).I want to optimize same time. Can i get good results or I should optimize step by step like first English then Germen or Spanish.

This will depend completely on how the site is put together.

If the languages use a common core then tweaking the core may improve all three.

And what needs optimizing?

I agree - depends on how the site's built, but it'd be better to optimise the whole site in one go, rather than in stages, I'd think.
