I'm using Microsoft Virtual server 2007 which I have installed an evaluation copy of Server 2003 on, but I cannot access the internet which I also require to register the license key.

I also get a message to install the CD which contains service pack 1 when trying to install the DNS server also, but all I have got is just the 2 CD's which I have tried & it seems not to contain it.

My IP address is 192.168. *.* , but my default gateway is blank.

You need to set it up so it uses your main computers IP address, DHCP server and default gateway. You can do this through ICS or you can use NAT. I do it through ICS with virtual pc.

As to the service pack problem. If you downloaded server 2003 as a trial from microsoft when you burned it to the two discs one of them contains service pack 2 (thus containing service pack 1).
