I guess that some areas of the MCSE course are easier than others to learn. I seem to have a slight problem fully understanding the IPsec process. Have looked at many articles but still cant get my head around it. Does anyone know of any resources that explain this process in a fairly simple way?

Depends exactly what you are looking for. The TCP/IP guide featured on the home page here has some useful stuff, and you can read the IPsec section on-line here .

Don't hesitate to say if I've misunderstood the problem....

As well as being useful for the exams it proved of great value to me in implementing VPN solutions.
