Just going through the god awful 70-680 book by Ian Mclean and Orin Thomas...anyway, little confused by a section relating to EFS.

The book states, that if an encrypted file is copied to a folder that is compressed "the file remains compressed" - it's on page 452. The questions and answer bit of the section confirm that encryption always gets priority, google suggests this as well, so i presume the "if you copy an encrypted file to a compressed folder, the file remains compressed" should read "...the file remains encrypted"?

Yes, the file remains encrypted. Encryption is not affected by parent folder attributes.
