Does it matter if I sit one exam with PearsonVUE & another with Prometric?

I had intended to sit 602 next Thursday (5th) but there are no appointments until the 12th; I know it's only an extra week but I've done all the prep and I don't want to hang around.

No, it doesn't. However you may have to contact Comptia a few days after your 2nd exam in order to merge your accounts (if you don't have you Comptia ID when you book your second exam).

Good luck on your exams :)

    What he said.
As long as you use your CompTIA/MCP ID etc when booking, you should be OK.
