Ive been doing the CIW for a while now. I used to complain like hell about the poor quality notes and lack of help, but i cant complain about the content of the material. It teaches you LOADS of things, from simple things like netiquet (may not be that important), to networking and the structure of the Internet as a whole. Ive realy enjoyed learning scripting languages such as Perl and javaScript. From your description of what you want to do I would highly recomend CIW as it gives a broad range of understanding of things like hosting, web development, and server configuration. I would also say that if you realy want to know your stuff, you probably need to do extra research on the side to specialise skills in certain areas, but with the knowledge that you will get from CIW, at least you will know exactly what it is that you need extra effort on.
