I have an Exchange book which really isn't enough of what I need... a somewhat introductory explanation of Exchange basics...

Well that is the resource kit - a good administration resource on the job, but a bit different to a study guide.

The best Exchange 2003 study guide IMHO is the following:
MCSA/MCSE
Exchange Server 2003 Implementation and Managagement
by Will Schmied [aka dontpanic] and James Chellis
ISBN: 0782143385

It is about $50 US or $35 UK pounds

- and dont forget to do either/both the MOC [Microsoft Official Curriculum] and setup a proper PC lab to study for this...
